One Pot Spicy Sausage Pasta

This is one of the easiest meals that is packed with tasty vegetables and delicious pasta. Between the rotel, onions, smoked sausage, cream, and tender noodles, you can’t go wrong. The pasta cooks in the cream and broth so it fully absorbs the flavor of the entire meal and is truly comforting for any time of the year! I hope y’all make it and let me know what you think!

 

Cook onion, bell pepper, and smoked sausage until tender and slightly browned.

Add Chicken Broth and Cream

Add Penne Pasta

Add Mozzarella Cheese

Ingredients

  • 1 box Penne Pasta (I use the brand Dreamfields from Kroger)
  • 1 package Butterball Turkey Smoked Sausage (sliced into half moons)
  • 1 medium Yellow Onion (diced)
  • 1 medium Green Bell Pepper (diced)
  • 1 can Rotel Tomatoes, Original (not drained)
  • 2 tablespoons Butter
  • 2 cups Shredded Mozzarella Cheese
  • Salt
  • Pepper
  • Cayenne Pepper
  • 2 cups Chicken Broth
  • 3 cups Heavy Whipping Cream
  • 1 hand full Chopped Parsley (for garnish)

Instructions

  1. Melt your butter in a large dutch oven on medium high.
  2. Chop the onions, bell pepper, and smoked sausage.
  3. Open the can of Rotel, but do not drain the liquid.
  4. Add diced onions, bell pepper, and smoked sausage into the hot pan. Adjust heat to high. Brown the sliced sausage and cook raw vegetables until slightly tender in butter. Stir frequently.
  5. Add chicken broth, stir and bring to a slight boil. Slowly add heavy whipping cream. Stir well. Season with salt, pepper, and cayenne pepper. It should be very soupy.
  6. Once boiling, add your box of dry penne pasta. Smooth the uncooked pasta into an even layer in your pot and press down with the spatula to coat in the broth and cream mixture. Add more broth/cream if needed to cover the pasta.
  7. Cover with the dutch oven lid and set the timer for 10 minutes. Adjust the heat between medium-high and high. Once the timer is up, gently stir the pasta. It should have absorbed most of the liquid. You want there to be some liquid in the pot and the pasta to be cooked.
  8. If the pasta is al dente to taste, reduce heat to low. Sprinkle with shredded mozzarella cheese and cover the pasta again until cheese is melted, about 5 minutes.
  9. Garnish with chopped parsley. Serve hot. Add more seasoning to your bowl if needed.

Notes

Spice Preference:

For Less Heat – use Mild Rotel Tomatoes

For More Heat – Use Hot Rotel Tomatoes
